Hitomebore Sake Rice
Hitomebore rice, the newest rice variety on the list, is see you apparently named to connote “love at first sight.” This type of sake rice is renowned for its soft, mild flavour and sweet floral aroma. Its medium-dry, medium-bodied characteristics with slightly higher acidity make Hitomebore rice particularly desirable when served with seafood and fish dishes. However, due to its comparative newness, it is one of the more expensive varieties used in sake brewing, having been created in 1991.
