Japan has a long tradition of celebrating the seasons through seasonal sake. In winter, Ichiban Shiboritate, a freshly pressed sake, is enjoyed during New Year celebrations (Oiwaishu). Summer calls for light, refreshing styles, while autumn welcomes Hiyaoroshi, sake matured through the warmer months and released with greater depth and balance.
