The "Matsu" It's not just a commercially-manufactured beverage, but is the culmination of the brewery's best work. Yamada Nishiki--a special type of sake rice--is used in the creation process, as well as modern distillation techniques, for perfect harmony between tradition and flamboyance. Extracting only the "nakadori" of the Moromi mash, this type of sake has a high level of purity when pressed and bottled. It's then chilled to perfection prior to its sale. The aroma that rises up is surprisingly elegant, sumptuous and fragrant, while its taste is soft and gentle and it creates a feeling of depth on the palate with its moderate astringency and bitterness.
