Every year, the newly-brewed sake from Isojiman arrives, made by low-temperature fermentation and unique koji brewing, using famous water from Mt. Aino in the Southern Alps and the yeast preserved in-house. The unique and mysterious fruity aroma and refreshing taste of this raw sake is due to the high refinement of the special Yamada Nishiki rice grown in the special A area, and its hand-crafted production during the cold season. Highly sought-after despite its limited quantity, this sake is amongst the pride of the Japanese sake industry.
