Hatsukame Junmai Daiginjo Tojo Aiyama Tajiri Farm
初亀 純米大吟醸 東条愛山 田尻農園作
Natives of Tajiri, located in the Tojo district of Hyogo prefecture, grew a luxuriously polished and brewed rice known as "Aiyama." Among the highest grade of sake rice production in Japan, a pure rice daiginjo sake was made from combining the deep rich sweetness of Aiyama with the transparency of long-term low-temperature fermentation. This resulted in a ginjo scent reminiscent of ripe tropical fruits, creating an approachable, direct style of sake with plenty of personality, and flavors of yellow and green plums.
