In the mountainous area of Aki City lies Nyugauchi, close to a brewery. Its raw material, Bijofu Ginnoyume, is a high-quality variety of rice that is grown under contract at a supervised rice field. Its distinctive characteristics include a mellow and soft feel, a gentle taste, a moderate and refreshing scent like that of apples, and a swell of umami with a pleasant and beautiful acidity resulting in a good sharpness.
