Established in 1875 (Meiji 8), the Kamei Brewery in Yamagata Prefecture produces sake of a unique taste and smell with use of low-acidity Ogawa No. 10 yeast. Furthermore, their Kudoki Junmai daiginjo involves extensive effort: small numbers of diamond rolls must be used to polish the grands of sake rice for close to 100 hours—reducing the percent of outward grain to 89%—and subsequently fermenting it for an additional 120 hours to a rice polishing rate of 11%.
