This bottle marks the second release in Hatsukame’s Zodiac Series, created to celebrate 2026, the Year of the Horse (午). Wrapped in a refreshing Ginjo aroma, this sake undergoes pasteurisation followed by approximately six months of ice-temperature aging, resulting in a gentle, smooth mouthfeel with refined balance. Brewed using 100% Reiwa Homare Fuji, Shizuoka’s original sake rice variety, this sake expresses an elegant rice umami and a graceful, lingering finish. Its calm structure and refined character are designed to complement traditional New Year cuisine, enhancing flavours without overpowering the meal. Produced in an extremely limited run of 888 bottles worldwide,
