This seasonal limited release from Hatsukame, Shizuoka’s oldest sake brewery, showcases a fresh, fruity, and highly approachable expression of newly pressed sake. Brewed as the first batch of the season, this Tokubetsu Junmai is bottled immediately after pressing in its nama (unpasteurised) and genshu (undiluted) form, capturing the vibrant character of fresh sake at its peak. For this release, Yamada Nishiki from Hyogo Prefecture’s premium Tojo area is used for the koji rice, polished to 55%, while Ginginga rice from Iwate Prefecture, polished to 60%, is used for the kakemai. The result is a sake that combines clarity, freshness, and depth, offering the lively brightness unique to freshly brewed sake alongside Hatsukame’s signature elegance and balance. Refreshing yet richly flavoured, this sake delivers a clean, juicy drinking experience with excellent sharpness and flow. Best enjoyed well chilled to fully appreciate its freshness and aromatic lift.
