Omachi Sake Rice

Omachi is a heirloom, extremely rare sake rice variety that has been used to produce many of the most famous rice types in the sake world. It is known for its mild yet aromatic, earthy and mellow quality, as well as its complexity and herbal character. Milling can be a difficult process when working with Omachi, as the grains crack easily, limiting the amount achievable (maximum seimaibuai around 45%). Its cultivation is made even more challenging, yet it results in a sake with greater complexity and earthiness, compared to other varieties that have a more fragrant and defined flavor elements.
